The 2014 Holman Ranch Sparkling wine was the first of its kind produced at this estate. Grapes were harvested in the classic Champagne-Style with a relatively low accumulated sugar and a high level acid. This results in a crisp clean base wine and provides the frame work for the finished product that is to be released three years later. Grapes were hand harvested and were gently pressed whole cluster to yield 120 gallons per ton. The juice was settled overnight and racked to the fermentation tank the next morning. The strong fermenting EC 1118 yeast was added and after a complete fermentation in 11 days, the wine was put to partially neutral French Oak Barrels. After 6 weeks of barrel aging the wine was racked back into a tank for Tirage preparation. This wine was made in Methode Champenoise meaning the carbonating secondary ferment takes place inside the bottle it will be sold in. Tirage took place on January 16th and the secondary fermentation reached the desired 6 bars of pressure 3 weeks later. The wine was then put to rest on its side for approximately 2 and a half years before riddling, disgorgement, and dosage.
